
Stuffed Bell Peppers

Stuffed bell peppers are an economical and versatile meal option. Whip em' up and season them however you want. This recipe is Cajun style.
Step 1
Prep the vegetables. Cut the tops off of the bell peppers and parboil them for 5 minutes then remove and allow to cool. Dice 1 onion, 3 carrots, and 3 stalks of celery and set aside. Frozen vegetables are a perfect substitute and a time saver.
Step 2
Make the filling. Sauté the vegetables in 2 tbsp of olive oil for 4-5 minutes then add the ground beef (90/10). Break up the beef and stir in 1 cup (dried) of cooked day old rice. Season well with your seasoning of choice. This recipe was Cajun style using Slap Ya Mama cajun seasoning, worcestershire sauce, crushed red pepper flakes, oregano, garlic powder, and black pepper. Stir in 1 (14.5 oz) can of fire roasted diced tomatoes and 1 (4 oz) can of tomato sauce.
Step 3
Stuff the bell peppers and bake in a preheated oven to 400 degrees for 15 minutes. Remove and top with your cheese of choice. This recipe used pepperjack cheese. Place back into the oven and broil for 4-5 minutes until cheese is bubbly and slightly browned.
Step 4
Serve with fresh parsley and your favorite hot sauce.
