
Salisbury Steak Tray

My favorite school lunch from childhood. I always looked forward to Salisbury steak day. Make it simple with boxed mashed potatoes and frozen or canned green beans. Or, make it "gourmet" by following the full recipe below.
Step 1
Form the ground bison or beef into patties with 2 eggs, 1 cup of panko bread crumbs, a few dashes of Worcestershire sauce, and season with Montreal steak seasoning. Pan sear the patties until browned on both sides (about 4 minutes per side) then remove.
Step 2
Toss sliced onion, baby bella mushrooms, and white cap mushrooms into the pan with the drippings. Sauté until most of the liquid has evaporated, about 8-10 minutes. Deglaze the pan with 2 cups of red wine and bring to a simmer to reduce for 20 minutes, uncovered. Add 2 cups with beef broth mixed with 2 tbsp of cornstarch and add the Salisbury steaks back in. Simmer for an additional 10 minutes to thicken the sauce.
Step 3
Make the sides. Cook minced bacon in a pan for 3-4 minutes and add garlic with green beans. Add 1/3 cup of water and cover for 20 minutes. Boil the potatoes until fork tender and mash with butter, milk, and sour cream.
Step 4
Serve in a meal prep or lunch tray for nostalgia's sake.
