
Rigatoni Alla Vodka

Vodka sauce is one of my favorite sauces and my usual go-to when I buy jarred sauce. Trader Joe's Organic Vodka sauce is amazing. Use that or make the sauce from scratch.
Step 1
Sauté the shallot and garlic in 2 tbsp of butter for 4-5 minutes then add 1 diced Roma tomato, 1 can of tomato paste, and a pinch of crushed red pepper flakes. Cook until it’s deep red in color, not brown, about 6-8 minutes.
Step 2
Deglaze the pan with vodka then stir in 1 cup of heavy cream, 1/4 cup of starchy pasta water, and 1/3 cup of freshly grated parmesan cheese.
Step 3
Bring to a light simmer for about 10 minutes until the sauce has thickened. Once thickened toss in the pasta and coat well.
Step 4
Serve with fresh cracked black pepper, more parmesan, and fresh basil threads.
