Coconut Lime Poached Black Cod

Poaching is a wonderful way to prepare fish. Lite coconut milk and lime juice is used in this recipe to poach black cod (sablefish). Serve over rich creamy mashed potatoes and crispy peas. Drizzle with curried brown butter.
Step 1
Make the crispy peas. Preheat an air fryer to 375 degrees and toss 1 cup of frozen peas with olive oil and salt. Add the peas to the air fryer and cook until crispy, about 10 minutes. Toss frequently.
Step 2
Make the mashed potatoes. Peel the Yukon gold potatoes and boil until fork tender in salted water. Drain well and mash with butter and milk until creamy smooth. Season with garlic powder and salt.
Step 3
Poach the fish and make brown butter. Salt the fish well and pour 1 can of lite coconut milk into a saucepan with the juice of 1 lime. Bring to a simmer over medium heat, submerge the fish, then cover and turn the heat to low. Poach until cooked through for about 10-15 minutes. Meanwhile, melt 1-2 tbsp of butter in a small saucepan over medium heat. Once melted, turn heat to medium-low and continue cooking for about 5 minutes until the butter begins to froth then turn golden. Pour into a bowl and season with curry powder.
Step 4
Serve the fish over mashed potatoes with crispy peas, drizzle with curried brown butter, and garnish with fresh cracked black pepper and a slice of lemon and/or lime.
