
Mediterranean Chicken Tender Salad

Love a big bowl salad? This is one of my favorites. Use any salad greens you prefer and your favorite salad dressing.
Step 1
Marinate the chicken tenders and quick pickle the red onions. Toss the chicken into a bag with balsamic vinegar, red wine vinegar, oregano, coriander, salt, and black pepper. Set aside for at least 1 hour. In a small saucepan combine 1 cup of apple cider vinegar, 1 cup of water, 2 tbsp sugar, and 2 tbsp salt and dissolve. Allow the mixture to cool then pour over thinly sliced red onions in a mason jar with garlic cloves and black pepper corns. Set aside for at least 1 hour.
Step 2
Prep the cucumber, cherry tomatoes, kalamata olives, and avocado. Wash and dry the salad greens (if necessary).
Step 3
Air fry marinated chicken tenders and chickpeas tossed in olive oil, cumin, garlic powder, onion powder, and salt at 400 for 12 minutes. Turn the chicken halfway through and shake the chickpeas.
Step 4
Plate each salad with fixings and sprinkle with crumbled feta cheese and drizzle with olive oil and balsamic vinegar to serve.
