
Korean Beef Tacos

I am Korean and I love tacos. That means it's taco fusion time. Take your standard ground beef tacos and give them a Korean twist.
Step 1
Prepare the sauces. Mix together 4 tbsp of soy sauce, 2 tsp of sesame oil, 1/2 tsp of garlic powder, 1/2 tsp of onion powder, 1/2 tsp of crushed red pepper flakes, 1/4 tsp of ground ginger, and 1 tbsp of sugar. In a food processor combine 1/2 cup of mayo, 2-3 tbsp of sriracha, the juice and zest of 1 lime, and 1 bunch of cilantro. Set aside.
Step 2
In a pan, heat up 1-2 tbsp of a neutral oil and brown the ground beef. Break up the beef and add sliced shiitake mushrooms. Sauté until browned then pour in the sauce mixture and simmer until slightly reduced, about 10 minutes.
Step 3
Heat 1 tbsp of sesame oil in a skillet and add a bunch of kimchi and sauté until cooked through and slightly caramelized, about 10-12 minutes.
Step 4
Serve on your tortillas of choice (white corn pictured here) with minced shallot, kimchi, sriracha sauce, and toasted sesame seeds.
