Use your rice cooker to prepare this entire meal. It's insanely easy, delicious, and inexpensive. This is a staple minute meal of mine.
Step 1
Rinse 2 cups of Jasmine rice thoroughly and fill the rice cooker to the appropriate fill line with low-sodium chicken broth. Add 1 tbsp of sesame oil, 4-5 slices of ginger, 3-4 green onions, and 2-3 cloves of minced garlic. Season 1 lb of boneless skinless chicken thighs with salt and black pepper and layer on top of the rice and aromatics. Close and cook.
Step 2
Serve with steamed baby bok choy (4 minutes in the microwave) and fresh sliced cucumber. Sambal Oelek or Sriracha are perfect condiments.
