
Cuban Sandwich aka The Cubano

Everyone loves a Cubano. It's true. Have you seen the movie, Chef (2014 film), directed by Jon Favreau? An amazing movie featuring an amazing sandwich.
Step 1
Make the mojo pork. In a food processor combine 1/2 cup EVOO, the juice of 1 orange + zest, the juice of 2 limes + zest, 1/4 cup apple cider vinegar, 8 cloves of garlic, a handful of fresh mint leaves, 1/2 tbsp dried oregano, 2 tsp ground cumin, 1 tsp salt, 1 tsp black pepper. Pour the blended marinade over a 2-3 lb pork butt and seal in a ziplock bag. Allow to marinate overnight. The following morning, place the pork butt with all contents from the bag into a crockpot and set to low. Go to work or do whatever you do for the day.
Step 2
After slow cooking all day, remove the mojo pork and shred. Mix together some yellow mustard and mayo in equal parts and spread evenly on each side of a ciabatta roll with 4 slices of deli swiss cheese and 2-3 slices of deli ham. Layer dill pickle chips on the bottom with a heap of mojo pork on top.
Step 3
Press the sandwich in a panini press (if you have one, I don’t). You can also use two cast iron pans. Place the sandwich into one and use the other as a heavy press on top. Flip the sandwich and toast the other side using the same method.
Step 4
Serve with your favorite chips and a dill pickle.
