
NYC Chopped Cheese

A New York City classic sandwich that is basically a hamburger, but better. It's all about that Adobo seasoning and chopped ground beef instead of a patty.
Step 1
Prep the vegetables. Thinly slice the iceberg lettuce and tomatoes then dice the white onion and mince a handful of pickled jalapenos.
Step 2
Heat olive oil in a cast iron pan over medium-high heat and add the white onion and jalapenos. Once softened, add the ground beef (make sure to use 80/20) and chop well until the beef is broken up. Season with Adobo. Cook for about 12 minutes until the beef is well cooked and starting to crisp.
Step 3
Toast the buns on each side in a separate cast iron pan. Once the ground beef is browned and crisp, line it up in the pan and layer it with American cheese singles to melt.
Step 4
Slice the buns and remove some of the bread from the top-side. Spread both sides with mayo and ketchup on the bottom, the chopped cheese, sliced tomatoes (season with salt and black pepper), then the lettuce (season with a few dashes of red wine vinegar). Wrap in wax paper and cut in half.
Step 5
Serve with your favorite chips.
