Vietnamese style braised beef stew. Finding all of the necessary spices can be difficult in American grocery store. Be sure to check out any international markets in your area because they usually carry a pre-made pho spice packet that has everything you need.
Step 1
Marinate the beef. Mix together 1/2 cup soy sauce, a couple dashes of fish sauce, black pepper, and salt. Set aside for at least 30 minutes. Meanwhile, prep the vegetables: carrots, onions, and shiitake mushrooms.
Step 2
Heat up avocado oil in a dutch oven and brown the beef, remove. Toss the onions in with 1 can of tomato paste and a little more oil. After 4-5 minutes add the carrots, ginger, and lemongrass stalks. Cover with 5 cups of beef broth and add aromatics (bay leaves, star anise, cloves, cinnamon, coriander, fennel seeds).
Step 3
Cover the Dutch oven and braise for 2 hours in the oven (275 - 315 degrees) depending on your oven. Add the shiitake mushrooms then braise for 1 more hour. Season with 2-3 tbsp of fish sauce once braising is complete.
Step 4
Serve with fresh cilantro, jalapenos, and red onions.
